A new vintage worthy of À ma Vigne

This institution of the 7th arrondissement hasn’t turned into some hipster joint or gentrified neo-bistro. It’s still very much the temple of steak‑frites and Lyonnais specialties. Under the Giraud’s wing

À ma Vigne was founded in the 1960s by Joséphine Giraud, a true mère lyonnaise whose signature dishes shaped the bouchon scene: steak‑frites, of course, but also her gratin of andouillettes and her salad of finely sliced gras double. This generous heritage was carried on brilliantly by her son Patrick, then by her grandson Stéphane. The next generation takes over

While À ma Vigne is no longer a family affair, it hasn’t been passed on lightly. Stéphane entrusted the keys to a longtime friend: Nicolas Framinet, no stranger to the job, as he had already taken the reins at Le Petit Bouchon Chez Georges and Vieille Canaille, another well-known spot in the 7th arrondissement. It’s also where he worked alongside his current partner, Éléonore Vaillon, who welcomed us with a perfect mix of warmth, charm, and well-poured communards.

A place kept in its authentic glory

Arriving on Rue Larrivé, the duo was determined to preserve the soul of the place. At the entrance, the imposing counter still sets the bistro tone. One wall displays a gallery of black-and-white photos, immortalizing the illustrious figures who helped make the restaurant’s reputation. On either side, two small dining rooms, where tables are close enough to spark conversation and few enough to remind you why you were smart to book ahead.

Tiny, buttery snails

Before taking our seats, the Compagnie du Rognon lingered at the terrace’s standing counters, sipping a glass of wine and nibbling on grattons. Properly warmed up, we dove into the starters: first, a little casserole of escargots, their aromatic punch softened by the velvety roundness of a garlic cream. Then came œufs en meurette and herring with warm potato salad. Worlds apart in style, yet both carried bold, honest flavors — and came in generous portions.

Like a knife through butter

Time for the house’s star to take the stage: a 300‑gram, 30‑day-aged steak, lounging blissfully in its brown butter bath. To match such ambition, an entire truckload of homemade fries arrives as backup — perfect for pacing yourself between bites without losing rhythm. The green salad on the side fulfills the role of a legally required disclaimer nobody reads. Far better to reach for the gratin of andouillettes, a monument of offal cuisine that’s both intense and comforting.

Joséphine approved

Once hunger gave way, an urgent need arose to coat our well-greased throats with something sweet. We sampled delicate œufs au lait, but the star of the finale was the Tarte Joséphine, the restaurant’s emblematic dessert named after its founder. Offered here in both orange and lemon versions, it’s a perfect balance of sharp acidity and luscious sweetness — a dense, satisfying tart that lives up to its legend.
