Last year, the Compagnie du Rognon was won over by the refined flair of Joseph Viola. This month, we trade Rue de Créqui for Rue de Cuire. The perfect chance to see whether Daniel et Denise Croix-Rousse lives up to its elder sibling.
Same recipe, new address?
One of our previous Bouchons of the Month introduced us to Joseph Viola’s original restaurant, established on Rue de Créqui in 2004. The concept was both simple and bold: blending hearty Lyonnaise “cuisine canaille” with the finesse of French gastronomy. Following its success, Joseph Viola spread the good word by opening a second location in Saint-Jean in 2012, then a third in Croix-Rousse in 2015.An elegant and warm setting
Right from the start, Daniel et Denise Croix-Rousse distinguishes itself from its predecessors with a unique ambiance. Soft lighting and exposed beam ceilings pay tribute to the former weavers’ homes of the neighborhood. On the walls, a rich, baroque tapestry enhances the space’s elegance. You’ll also spot framed photos of celebrities who came to feast.
An open kitchen to whet the appetite
The restaurant has a single dining room with few, closely placed tables — in true bouchon fashion. The Compagnie du Rognon was lucky to sit right next to the open kitchen, where we could admire the skilled hands of the brigade as they brought our dishes to life. A perfect appetite teaser.
A déjà-mangé feeling
Reading the menu, one might be surprised to find many of the same dishes already sampled on Rue de Créqui. The head waiter explained: each location relies on a shared foundation, shaped by Joseph Viola’s know-how. Each team then reinterprets that menu, bringing its own flair to the Meilleur Ouvrier de France’s mix of gourmet and rustic cuisine.
In the Starter block
After a charcuterie board to kick things off, the Compagnie sampled the chef’s world-champion 2009 pâté en croûte, filled with ris de veau, duck foie gras, veal shoulder, and mushrooms. We also appreciated the spring freshness of the green pea cappuccino scented with tarragon, served with a poached egg and golden croutons. As for the œufs en meurette, they surprised us both by their rather modest portion and by the sauce — dense and complex.
Bold, comforting mains
The dishes at Daniel et Denise Croix-Rousse struck us as even more generous and hearty than those at Créqui. Case in point: the elegant whole veal kidney roasted in a cocotte; the remarkable contrast of textures in the crisp yet melting Cantal farm pork belly, served with a mild port-spice sauce and a salad of arugula and fennel. Or the truly comforting yellow farm chicken tournedos, stuffed and slow-cooked with seasonal vegetables in a tarragon-infused jus. All of this was wrapped in delight with duck fat potatoes and a creamy béchamel pasta gratin.
French toast, first-class finish
A must-try: the Compagnie enjoyed a delicious and very generous serving of cervelle de canut. This was followed by vanilla crème brûlée and a praline tarte Tatin. But how could we resist the brioche-style French toast again? Its crisp exterior and buttery richness were already satisfying. But then came the warm praline sauce, poured directly in front of us, coating the brioche, flowing across the plate, and finally overwhelming the palate with pleasure.
