It was in 2015 that Le Bouchon des Cordeliers opened its doors on rue Claudia, just a few steps away from Bouchon Comptoir Brunet. And like its neighbor, it shares a rather disheartening view: a parking lot, which in 1971 replaced the famous “belly of Lyon” — in other words, the city’s historic Halles, now relocated to Cours Lafayette. But enough with the melancholy, as the team at Le Bouchon des Cordeliers, through its cuisine and ambiance, rekindles the gourmet tradition of the Capital of the Gauls. Cédric Garin isn’t heading Le Bouchon des Cordeliers by accident. With a great-grandfather who was a winemaker and a father in the restaurant business, he started out with solid foundations. Trained under Meilleur Ouvrier de France Daniel Leron, he then moved from one culinary legend to another: Christian Têtedoie, Le Nord by Bocuse, Troisgros in Roanne, La Pyramide in Vienne. Good taste, good banter and good stew
Red and white — that’s what’s in your glass and also what meets your eyes. If you somehow forgot you were in a bouchon, the vermilion walls and white tablecloths are here to remind you. A few exposed stone walls add a classy contrast and lend character to the whole. We felt like pigs in clover, seated upstairs by a cheerful team that totally gets the bouchon spirit: flawless service with a healthy dose of cheek.Ready for apero
We kicked things off with the aperitif: the chestnut kirs were smooth; the communards were simply the best we’ve ever had. Then came the starters, teetering between the classic and the daring. In the first category, the œuf meurette both lured and impressed us. In the second, the upside-down tart of pig’s feet and garlic butter snails took a bold stand with flavors that were forthright and harmonious.
Friendsand wine
Though somewhat limited that day due to a recent reopening, the wine list held some surprises. Of course, Beaujolais wines were present. We had the pleasure of tasting a fabulous Régnié (Domaine Les Capréoles, Sous la Croix, 2021) and a Morgon by Laurent Gauthier. In short, fine bottles and fine company to pair with the evening’s dishes.
Re-veal the plate
Early January means no daily specials on the board. No problem — it gave the Compagnie a chance to revisit the classics. Some of us tackled the veal andouillette from Bobosse, with its mustard sauce and Lyon-style potato paillasson; others studied the Lyon-style pike quenelle, served with lobster sauce and pilaf rice. All dishes passed the test with flying colors. Especially the braised veal chuck: the tenderness of the meat was comforting, and the vegetables, though glazed in the cooking jus, warmed our bellies.

As usual, the Compagnie du Rognon collected itself around a generous cervelle de canut. Then it was time for dessert. On my left, an Italian-style lemon meringue tart; on my right, a chocolate tartlet with salted caramel and toasted hazelnuts. And on my plate: a baba soaked in aged rum infused with vanilla — the most delicious of chemical reactions. As the rum gets soaked up, the pleasure lingers.
