Our method

Who writes, and how we test a bouchon

La Compagnie du Rognon was born on 6 September 2022, around a bouchon table, among a bunch of friends. Since then, we have been writing about the Lyon bouchons we test, one article at a time.

Every article is signed by the Companion who wrote it: Valentin or Paul. You can meet the whole gang in The Companions.

Our approach comes down to four principles.

1. We go as a group. A “bouchon of the month” means at least four Companions around the table, tasting several dishes from the menu. We write our article after that first visit.
2. We show what we ate. Photos are taken on the spot, by us, on the day of the meal. No stock photos.
3. We tell, we don't rate. No stars, no score out of 20: we describe the food, the welcome, the atmosphere and the bill, so you can judge for yourself.
4. We choose in a set order. First the bouchons certified by the association des Authentiques Bouchons Lyonnais, then those it named bouchon of the year, and finally those with a strong reputation that are not certified.

Independence

We always pay our bill. We have never been invited by a bouchon and have no partnership with any restaurant: nobody pays us to write about them.

Corrections

We correct factual errors as soon as we have checked them. When a correction changes the meaning of an article, we say so at the end of it, with the date.
